Caol Ila single malt here, drawn from a pair of bourbon barrels that housed the whisky for 8 years.

• Palate: Creamy and spicy with vanilla and a pinch of sea salt. The sea salt and soft smoke develop further on the palate, working well with bright hints of fresh green apple.
• Finish: Savoury maritime notes with black pepper.
