Another fantastic offering from independent bottler, Signatory – this single malt was drawn from a pair of casks from Caol Ila. The liquid within was distilled in July 2012 before slumbering away in hogsheads for just under a decade. In June 2022, nine years later, the whisky was bottled, without chill-filtration, for Signatory's Un-Chillfiltered Collection.

Tasting Notes:

• Nose: Buttery Danish pastries, with a touch of waxy lemon zest and earthy smoke.
• Palate: Drizzles of caramel, oaky vanilla, stewing orchard fruits, a touch of green wood, and smoky cinder toffee.
• Finish: Smouldering ashes, lingering spice, and baked apples.
