This is an 8 year old Irish single malt whiskey from The Quiet Man range, finished in first-fill bourbon barrels. The name doesn't come from the John Wayne film, but from the father of the brand owner, a bartender who heard many stories when behind the bar but told no tales.

• Nose: Honey, sharp apple, white oak, fudge.
• Palate: Toffee apple, pear, thick vanilla and orange peels.
• Finish: Cedar wood, brown sugar and a hint of ginger
